Favorite Sweet Breads

 

Zucchini Bread

3 c sifted flour

1 ½ c sugar

2/3 c brown sugar

1 t soda

1 t cinnamon

1 t salt

¼ t black pepper

1 c oil

1 t vanilla

3 eggs

2-3 zucchini, grated

 

Combine dry ingredients then add wet.  350’ until nicely browned - 2 loaves

 

Strawberry Bread

3 c flour

1 t soda

1 t salt

1 t cinnamon

2 c sugar

4 eggs, beaten

1 ¼ c oil

2 c frozen strawberries (thawed)

350’. Sift together flour through sugar. Combine rest. Add to dry ingredients. Pour into two loaf pans. Bake one hour.

 

Pumpkin Spice Bread

3 c sugar

1 c veg oil

4 eggs, lightly beaten

1 can (16oz) pumpkin

3 ½ c flour

2 t b soda

1 t salt

1 t cinnamon

1 t nutmeg

½ t cloves

½ t allspice

½ c water

1 c chocolate chips (an optional, but very tasty addition!)

350’ Combine sugar, oil, eggs. Add pumpkin. Combine all dry and add to the pumpkin mix alternately with water. Pour into 2 loaf pans. Bake 60-70 mins.

 

Banana Bread

1 3/4 c flour   (I used 1 c flour and 3/4 c bread flour)

2½ t b powder

 ½ t salt

¼ t cinnamon

1 c very ripe banana

½ c milk

½ c sugar

1/3 c oil

1 egg

1/3 c cocount (optional)

350’.   Stir dry ingredients together. Combine wet ingredients.  Add wet to dry (I used a mixer).  Bake 1 hour in loaf pan until golden brown.
