CHOCOLATE COVERED CHERRY COOKIES   (from Nancy Koenig)

1 1/2 c  Flour
1/2 c  Cocoa
1/2 t  Salt
1/2 t  Baking powder
1/4 t  Baking soda
1/2 c  Softened butter
1 c  Sugar
1  Egg
1 1/2 t  Vanilla
1 (10 oz)  jar maraschino cherries
1 (6 oz) pkg choc chips
1/2 c  sweetened condensed milk
 
Preheat oven to 350 degrees.  In a large bowl, stir together flour, cocoa, salt, baking powder and baking
soda.  In a mixing bowl, beat together butter and sugar on low speed of electric mixer until fluffy.  Add egg and vanilla; beat well.  Stir in dry ingredients; mix well. Shape dough into 1-inch balls; place on ungreased cookie sheet.  Press in center and place drained cherry in center of each cookie. In small saucepan, combine chocolate chips and milk until chocolate is melted (or heat in microwave oven).  Stir in 1 tablespoon of drained liquid from cherries.   Spoon 1 tablespoon of chocolate/milk mixture over each cherry.  Bake for 10 minutes.

 

 

DEATH BY CHOCOLATE COOKIES


2 pkg  Baker’s Semi-sweet baking chocolate
¾ c  packed brown sugar
¼ c  butter
2  eggs
1 t  vanilla
½ c  flour
¼ t  baking powder


350’.  Chop 1 pkg chocolate.  Melt remaining chocolate unitl smooth.  Add sugar, butter, eggs, vanilla.  Add flour, b powder.  Stir in chopped chocolate.  Drop by ¼ c fulls.  Bake 12-13 minutes until puffed and set to the touch.  Cool 1 minute.

 


TEXAS SHEET CAKE    (from my Mom)

2 sticks butter
1 Cup water
3 Tablespoons cocoa

Bring the above to a boil (stirring often) and pour over:

2 Cups flour
2 Cups sugar
½ Teaspoon salt
(measure these into your large mixing bowl)

Mix well with electric mixer and add:

2 eggs (well beaten)
1 Teaspoon baking soda
½ Cup buttermilk   (can use powdered)
1 Teaspoon vanilla
1 Teaspoon cinnamon


Bake approximately 30 minutes at 350' in 9x13 dish coated with cooking spray.  Check center to make sure it is completely cooked.


FROSTING:

1 stick butter
3 Tablespoons cocoa
6 Tablespoons Milk

Heat the above ingredients but do not boil.  Remove from heat and add 1 teaspoon vanilla and powdered sugar to desired consistency.  (Mix sugar into heated mixture a small amount at a time using electric mixer.)
