Pumpkin bread in muffin form

I’ve attempted homemade muffins a few times and they’ve always failed. Probably for muffins you have to be painfully precise about the measurements and ingredients, or something annoying like that. But I had to make a large quantity of small edibles for a brunch-type event. I had a can of pumpkin so I decided to try making pumpkin bread, but put the batter in mini-muffin tins instead of loaf pans.

The result was very tasty. And very cute.


And they disappeared very quickly.

UPDATE:  You can also add some chocolate chips to the batter (or butterscotch chips, as a reader commented below)!

I actually do this quite often. I then freeze them & use them for hubby's breakfast. I take them out at night & they are thawed by morning. It works great. Now I need to go make some pumpkin bread/muffins. ;-)

I make mini pumpkin muffins that have butterscotch chips in them....DELISH! Everyone always raves about them and most importantly they're easy!
